Healthy, Allergy-Friendly Restaurant of the Month: True Food ...

The first time I ate at True Food Kitchen, I said ?If I had a restaurant, this is exactly what I would want it to be like.? I was so impressed, I went back again a week later.

True Food Kitchen, located in the heart of Cherry Creek at the corner of Second and Detroit, fuses a clean and urban relaxed vibe with the absolute best quality healthy food, created and served in combinations I use in my own cooking.

To me, healthy food is nutrient-dense and whole, and healthy cooking combines whole foods in a tasty, appetizing way that enhances their flavors without detracting from their nutrient profile. Imagine adding herbs and spices instead of salt and oil, seeking local and farm-raised ingredients and cooking with seasonal ingredients.??To me, healthy eating is having the knowledge about the foods? benefits to my body, and eating in a way to purposefully improve my health and fitness.

To see a restaurant actually practice those principles is amazing, inspiring and makes me want to eat there every week ? and tell all my friends. I?m a fan of Fox Restaurant Concepts (FRC)?other restaurants ? Bloom, NoRTH, Sauce, Wildflower (and more) ? but this latest?venture is my favorite restaurant of all. To create this very special and awesome concept, FRC owner Sam Fox teamed up with a leading authority on anti-inflammatory diets and true leader in the health food movement, Dr. Andrew Weil.

Dr. Weil?is the?business partner and inspiration for True Food Kitchen. With a medical degree from Harvard, Dr. Weil is the founder and director of the Arizona Center for Integrative medicine, a bestselling cookbook author, and someone I often look to and use as a reference in my own culinary experiments and food research.

A friend who dined at True Food Kitchen recently told me she was actually seated near the doctor?at lunch time,?and was thrilled to see him there. Another friend who ate there last night said,

The True Food Kitchen was very cool last night. Had the Albacore Escabeche, Killer! The Farmer?s Market Salad ? also very yummy, and I had the Red Chili Shrimp, and C had the Grilled Steelhead Salmon?and Squash Pie for dessert that was to die for ? with whipped coconut cream over the top. All excellent! And cooked to perfection! Had a great waiter named Brad, and spent some time talking to the GM, Tyson Carpenter. The only thing they need, in my opinon, is a gluten-free piecrust! (maybe they?ll let Betty Rocker share a good recipe with them!)

I?ve eaten there twice now, and am looking forward to going back! Both times I received excellent service, had amazing food, had no trouble navigating the menu for gluten-free and dairy free items (they?re clearly marked, and so are the vegan items) and had the pleasure of meeting some of the restaurant?s rockstar team ? notably the extremely ?personable manager?Fabian Chavira, and the well-spoken and thoughtful GM, Tyson Carpenter.

When you go, be sure to try the Kale-Aid, a fantastic blend of kale, apple, cucumber, celery, lemon and ginger (similar to one of my favorite green smoothie blends) ? or perhaps an Apple-Carrot Ginger Tonic.

I?ve sampled the Albacore Escabeche and the Shiitake and Tofu Lettuce Cups ? both phenomenal ? good sized portions for appetizers, and very tasty.

A friend I dined with on my first visit had the Grass-Fed Bison Burger, which comes with umami, mushroom, onion, mayo and parmesan ? on a flax-seed bun. He was impressed.

And let?s not forget about dessert ? the Squash Pie?John mentioned, (served with coconut whipped cream) is a hit, and I was also quite fond of the Dairy-free Organic Chocolate Pudding, which comes topped with walnuts and pistachios.
